Kale Salad

kale
lemon juice
olive oil (2–3 tbsp)
vinegar (1 tbsp)
salt & pepper
parmesan, finely grated
pine nuts
wash kale, chop small, massage with your hands for a minute
mix lemon juice, olive oil, vinegar, salt & pepper – taste as you go
work the dressing into the kale with your hands
toast pine nuts until golden
top with parmesan and pine nuts
